This makes the equivalent of 7 cans of soup. I picked this recipe up from our County Extension office. The lady said if you are using this in a casserole you can skip cooking it and just mix it into your recipe. This is a low sodium recipe which contains 111.0mg of sodium compared to 2110.6mg in a can of cream of mushroom soup. This creamy cauliflower and roasted red pepper soup gets its silky texture from the potatoes so there is no need to add milk or butter! You can substitute veggie broth for the chicken broth for a vegatarian meal! Submitted by MISSJCISRUNNING Carbs: 39.8g | Fat: 8.9g | Fiber: 9g | Protein: 7.3g | Calories: 253.1

This is a really healthy soup and a good recepie to add vegetables to your daily food. I used salt, however you can swap it for a low sodium vegetable stock. You can also substitute the cottage cheese for tofu. enjoy!! Submitted by SIMPLYCHRYS Carbs: 6g | Fat: 2.5g | Fiber: 2.2g | Protein: 4.4g | Calories: 58.1

This recipe makes a lot--I freeze some for later. Or, you could cut it in half. It's really filling and low calorie/fat. Submitted by JAKE9999 Carbs: 39.6g | Fat: 1.4g | Fiber: 4.2g | Protein: 11.8g | Calories: 208.1

This is my family's favorite Italian wedding soup. The mini meatballs are a huge hit with the kids. Although many people use spinach for the leafy green in wedding soup, the recipe that was handed down to me called for endive lettuce, so that is what I use. Endive costs a lot less than spinach, and my family and I have always enjoyed our soup made with it. . If spinach is your favorite, feel free to make a substitution.
