Cookbook creator says: This recipe is wonderful. I did not use zucchini. I used just a yellow squash. I crunched up some croutons and put them on top of the casserole to add crunchiness.

Cookbook creator says: This recipe is great and low fat. It filled me up and was satisfying. You can substitute cooking wine for low-fat chicken broth and low-fat yogurt for nonfat yogurt for less calories. Serving size 1-1/4 cups.
