Love Chipotle food? I modeled this recipe off my favorite burrito bowl from Chipotle (Less rice, more bean, all four salsas and guac.) The recipe sounds complex because there are lots of parts, but it is pretty easy to throw together in 20 minutes. Great for larger groups, too.

Great healthy option for a potluck. Without the olives it's completely fat free! You can add jalepenos for an extra kick. Add avacado or turkey chili to make it more filling for a meal (will add fat).

I'm in love with the Green Giant 'Healthy Vision' steamed blend of zucchini and carrots with rosemary but i get tired of paying $2 a box for a serving of veggies. I whipped up my own version for less than half the cost and it's as simple as slice- nuke- and toss.
