I am compiling this cookbook for holiday cooking, although most of these recipes can be cooked year round. I'm including a lot of vegetarian dishes for my non-meat eating niece.

Using canola oil instead of butter and egg white liquid instead of whole eggs, I guess its a very tasty and healthy recipe for a good snack

These bean cakes are yummy and great for you. Served with the salsa, it makes a very colorful and festive presentation. I serve these with a lite side salad. Plenty of protein and fiber. Even my meat loving hubby loves this meal.
