This recipe came from the chicken enchilada recipe I submitted earlier. I didn't need to make that many chicken enchiladas, so I made this up to make a slightly different meal. I used the remaining sauce from the chicken enchilada recipe, then added the remaining chicken and added the chicken broth.

The 3 C's-Crunchy Carolina Chicken Salad
Very Good 4.3/5
(19 ratings)

This is a makeover of Ruby Tuesdays Carolina Chicken Salad, with a calorie intake at over 1,000, is no way for any American to eat, there has to be a better way.
I chose to add flavorful, healthier ingredients to pack this "3C Salad" with character, class, and crunch. 3C Salad is quickly becoming a family favorite for lunch.

Layered Mexican Dip with Baked Lime Chips
Very Good 4.5/5

My dip has all the flavor of the original, but it's much easier on the waistline. I prefer to eat this "dip" with a fork or raw vegetables.

Best Tuna Sandwich
Very Good 4.3/5
(17 ratings)

I’m a big fan of tuna salad sandwiches. They’re easy and quick to make, are relatively healthy, and are equally as good as an office lunch or in a picnic basket.

There are three key ingredients at work with this version. First off is the lemon juice and zest…it gives the tuna a light, summery flavor that hits immediately. Second is the toast…if you try it straight from the bowl, it just isn’t as good; you need a warm, dry piece of bread to help the flavors burst in your mouth. Third is the cottage cheese…you don’t taste it at all, but it makes the tuna salad so rich and creamy.

Avocado & Kidney Bean Salad
Very Good 4.6/5
(9 ratings)

This is a yummy salad that is very flexible. Try subbing olive oil/balsamic vinegar as a dressing. Remember avocados are a little bit higher in the mono saturated (healthier) fats but also a great source of fiber! On the 2nd round of this salad, I tried adding dill and some rinsed, canned chicken. That was also good. Enjoy :)

*Rinsing beans, reduces sodium from what is listed
