Meatloaf made with lean ground turkey can tend to be dry and mealy. The shredded zuchinni in this recipe not only adds nutritional value, but moistness and tenderness. Using instant oatmeal (vs. regular or quick oatmeal) also helps ensure a more tender, uniform texture.

Modified Version of the Recipe submitted by KHILKEY. This version removed all canned vegetables and uses real mashed potatoes. This version is slightly more calories, fat, etc, but reduced your sodium by about half.Submitted by CHIIEDDY
Similar concept to another recipe of mine, and other popular recipes on this site, but this recipe uses low sodium ingredients, and is still very tasty! I freeze leftovers in small microwaveable containers, and place them back in the refridgerator the day before I want to reheat them.Submitted by APRILDAWN678
