A recipe from Jessica Seinfeld's cookbook. It is the base for her Protein Packed Grilled cheese sandwiches. The bean dip recipe makes more than you need for the sandwiches. This was a major hit with my toddler. The recipe calls for part-skim ricotta instead of cottage cheese, but I had to sub because I didn't have any on hand. Very yummy and satisfying.

This is a healthy kid-friendly lunch. The bean dip makes a great spread for this sandwich, or stands alone with veggies and chips. You will have leftovers of the bean dip, as the recipe makes about 12 tbsp.
