World's Best Spinach and Artichoke Dip

This is seriously the world's best spinach and artichoke dip! It's creamy and fairly low fat. I use low fat cream cheese, but you could use fat free. This slimmed down version of your favorite dip is easy to make--and it's light enough for you to load up on it! This can also become a decadent pasta sauce. (As a sauce, it makes 10 servings. You might need to thin it a bit with cooking water from the pasta.)

I modified this from the Ellen Show (10-05-10). Made it for the Superbowl and put it out with the "other" queso. It ran out first. It's a great faux cheese for nachos. The uses are endless. You can add anything to it... Don't forget to add your chips to your tracker. ;-)Submitted by AMBER353

These are really fast and yummy. The jalapeno and red pepper make the fritters colorful and add just a little spice. If you don't have a red bell pepper laying around, just leave it out. Serve with salsa or as a breakfast side in place of potatoes. A cast-iron skillet works best for even frying.Submitted by SEA.LEGS1
