Adapted from healthdiscovery.net recipes. I added Grape nuts for a little crunchy "crust," and have made this less sweet than the original recipe. I've also put the spice proportions that I like, and have used real eggs instead of egg beaters. Substitute 1/2 cup of egg substitute or egg whites if you don't want to use the whole eggs.

This banana bread is really low fat but you would never know it! To make it even lighter use splenda and a full cup applesauce and eliminate the butter completely. My husband who is "anti-diet food" LOVES it! Add chocolate chips or walnuts in the last step to mix things up a bit!
