Omelettes made in a muffin pan. Great for a quick breakfast. Make them in advance, wrap them in plastic wrap when they have cooled and freeze them. Then re-heat them in the microwave for about 1-1.5 minutes and enjoy.

Quick and easy breakfast that is tasty, filling, and low carb. It's great for a crowd, too, as it's just as easy to make a dozen as it is to make one. If making more than one, placing ramekins on a sheet pan is helpful.

This is a simple recipe which I have "lighten" up as much as possible. This nutritional values are with the fat free sour cream. I enjoy making this one as it allows me to be creative with different dried fruits such as mango, apricot. Also, can be made with fresh fruits if you desire.

It's adoptable for Passover by using Kosher forPassover noodles as well as Kosher for Passover ingredients. This is a splurg recipe for me but for once or twice a year it's a treat.

My husband hates oatmeal, and this is a good, high fiber, high protein alternative. Can also mix up a big batch either on the stove or the crockpot and eat all week. Add whatever toppings you want to it: they're not included in the recipe calculation

This is elegant enough for a Sunday brunch, and provides a different way to enjoy your breakfast oatmeal. It can be enjoyed as is, or topped with maple syrup. Leftovers are good cold or can be reheated in an oven or microwave. From Lean and Luscious and Meatless.

update: needs a 1/4 tsp salt and more sugar/sweetner in my opinion, but I'm not changing the recipe. My S.O. thought it was perfect with maple syrup on it.
