This is a coffee cake variation on the standard chocolate mug cake. You can make it with 3 T wheat flour instead of the rice & tapioca flours and potato starch. You can substitute regular flour for the buckwheat, too, but the latter gives the cake a nice homey taste. But don't make it alone or you'll eat the whole thing.

I tried this recipe when visiting in Maine at a little country flea market and I personally am not a fan of Rhubarb. When I have a chance to get Rhubarb I grab it now.

Strawberries and Cream Surprise Cupcakes

The Surprise is that these cupcakes have no butter or oil in them, less sugar and less flour, but do use zucchini, and have a hidden spoon of strawberry jam!
If made using rice flour they are also wheat free.
