This is a wonderful recipe of beef stroganoff that my singing teacher gave to me in music format. ok- the mexican beef and rice was too high in calories for some- so I made it over- for about 1/2 the calories- removed the oil, added add'l 1/4 cup of ff cheese, and a larger jar of salsa kept this from getting too dry.
