I found two recipes on Food Network for a full salad and another for a dressing. I took them both and combined for the salad with the dressing.

Delicious sauce for anything from chicken to salmon to rice or just as a dip for brad or veggies-
It disappears faster than you can serve it.
Use 1 large seedless cucumber with the peel if you can or 1 1/2 regular cucumbers peeled if you don't have seedless. Salt and pepper are always to taste, and the olive oil is optional but gives the sauce a bit of richness that is pretty good.
This sauce doesn't usually call for onion, but, I like it.

I found this recipe someplace online over a year ago and tweaked it to taste. VERY EASY, very juicy and goes great with green beans and applesauce.
I "eye-ball" measure when I cook this sort of thing, so the measurements given for the marinade ingredients should be to your taste (but DON'T use less Hoison than listed- this is the main taste of the dish!)
This has become the recipe everyone who comes over for dinner wants me to make....and it is SO EASY!
(BTW-you can find Hoison sauce in the asian area of your grocery store-it will be by the soy sauce, teriyaki and other asian sauces and seasonings)

this is a recipe I found in Sparkpeople but I didn't need the salad only the dressing. It's a quick, easy, lo-sodium recipe that makes a fantastic mexican cuisine night. I like versatility of the recipe. You can change one ingredient and the flavor is totally different.

Caribbean Pulled Chicken Stew

This is a thick hearty BOLD tasting stew. The ginger gives it a kick and the coconut milk adds a delicious texture and rich flavor. I was apprehensive at first as I wasn't too sure how this stew would turn out but it ended up being AMAZING, everybody loved it and had multiple servings, the pot was empty in no time !!! I promise this stew will not disappoint!

(use homemade chicken broth and you can cut the sodium in half in this recipe)

(for extra protein add a can of chick peas, but rinse well to keep the sodium low)
