Boil the potatoes (with skins on) and the eggs until done. While the potatoes and eggs are cooking you can dice up the celery and onion into a fairly large bowl. Let the potatoes and eggs cool, then dice them up as well into the same bowl with the celery and onions. You can leave the skins on the potato if you like. Once everything is chopped you can mix it up with a 1/2 cup of miracle whip and a 1/2 cup of light mayo. Mix everything together and salt and pepper to taste. Lastly, add the vinegar and stir thoroughly and refrigerate until cool. I like mine very tangy so I put more vinegar depending on taste. Submitted by CORTNEY_NAMASTE
Adding cheese to the filling and on top is very tasty, but will bring up the calorie count, fat, etc. I made some each way the other night, and found that the ones without the cheese were just as good!Submitted by CHENIA
These spicy and moist boneless pork chops are made with no added fat, egg whites, evaporated skim milk, and a lively herb mixture.
I omitted the saltines which are high in fat and calories. I used oats instead to soak up the moisture and hold the loaf together. The idea for oats came from an old recipe from a great aunt.Submitted by MADREJEN
These muffins are loaded with whole grains, fruits, and vegetables! This is a slightly different version of my Healthy Breakfast Muffins. This recipe made 32 regular sized muffins. Depending on how full you fill the muffin cups, I'd say you should get 28 - 32 muffins. Nutritional value is calculated on 30 servings (1 muffin = 1 serving).
This dish can be assembled a day ahead and refrigerated. Remove from the refrigerator and let stand at room temperature for 30 minutes before baking. The potatoes are parboiled to soften and prevent them from releasing too much water as the gratin cooks. Look for cooked, diced ham at the grocery store.Submitted by RENGEL26
