This recipe is adapted from one found on www.smittenkitchen.com. Makes 8 servings of 1 cup each. The ingredients are approximate, there is no need to be precise with this. Pretty much just add everything to taste! (This is also great as a salsa like dip for light tostito chips!) For more visual effect, use 1 green pepper and 1 each of red, orange, and yellow.

Use this marinade with boneless skinless chicken breast cut into strips or chunks. After it is cooked, the chicken can be used as chicken fajitas in a tortilla, in a quesadilla, or put on top of a salad. You add the toppings of your choice.

I borrowed this from another Spark People recipe. This is listed as 8 servings. In actuality you use half of it to marinade the chicken, then throw that part away. You use the other half to evenly baste 4 servings of chicken breast while cooking it.
