break up the Kale into bite size chunks. Place in a cookie sheet with olive oil drizzled over the top. Salt and fresh ground pepper to taste. Sprinkle Parmesan Cheese over it and bake at 350 for 15 min or so. Even my 2 year old loves it.

This is super easy and if you take the time to really work the oil over the kale you can cut calories by only using 1 tsp oil vs. 1 Tbs like a lot of other recipes call for.

I like those cinnamon coffee cake things Hostess (?)brand makes. You know, they come 2 to a pack, and probably sit in your office vending machine?

Anyway, as much as I like them, they aren't healthy for me...plus they have a strange, almost bitter after taste to me now. So here's the first (of many to come) Sort Of recipes.

I bake these in a rectangle-shaped, 2-inch dish, but I'm sure muffin tins would work too.

Also, it does have, like 10 steps, but altogether, this takes less than 10 min to get it to the baking stage.

Faster, cheaper and just as rich and delicious but so much more healthy than the restaurant versions. Try substituting the unsweetened chocolate Almond Breeze almond milk for a chocolately treat.
