I love Chili's Southwestern Eggrolls. They have so much tasty stuff in them, but I hate the fact they are deep fried. I added more beans and corn and then put them in the broiler for crunch.
These are great made ahead of time and *frozen for a quick meal or a fun snack for the big game. I make a double batch so I can freeze some for later.

I've made this recipe for years and decided to try some swaps to see if I could make it lower in calories/fat, etc. I do not like nuts so those have been omitted. The modifications are Skim Milk instead of Buttermilk, Smart Balance instead of Butter, Wheat flour to replace half of the white flour, Stevia to replace granulated sugar, 1/2 teaspoon salt instead of 1
