I got this recipe off of According to the recipe description there, this recipe was from a 1995 or 1996 National Enquirer. It was posted on 'Zaar by Spyder-man. I did make a few minor modifications (I didn't add green peppers or shallots and made some other adjustments).

I don't believe the Cabbage Soup Diet is a great diet to follow, however, this is a really good soup for snacking or lunch. It reminds me of the Cabbage Soup they serve at Big Boy. Also, I halved the recipe and it still made a TON of soup - - roughly 20 servings.

Slice cucumbers very thin. Slice onions thin, they are optional. Soak cucumbers in cider vinegar just barely cover them. Soak for at least 1 hour. They longer they soak the stronger the flavor. Drain. Add a couple of dollops of plain yogurt or sour cream until they are at desired consistency. Keep refrigerated. ENJOY!
