Think you dislike beets? Not after trying this recipe! Roasting brings out the beets' natural sweetness, and the feta offers a salty contrast.

This variation on shepherd's pie is topped with quinoa instead of potatoes for added protein (5.5 g per serving). The beets are sweet and add tons of iron (10.5% DV per serving).

I find this a really filling meal, the goat cheese I use has a bit less fat then the one in the recipe. You can substitute a Low Fat Goat Cheese if you want to bring down the fat content more.

Also, you can substitute fresh beets, I use the canned kind when I don't feel like peeling beets.

You can also add potatoes, zucchini, carrots, or any of your other favourite veggies!

adapted from thekitchn.com. The original recipe calls for golden beets, chard, and barley. I used what I had. I also didn't have any feta so I used some edam, just as tasty.

Who says veggie chips have to be expensive or fried? These baked beauties are good for packing in a lunch, serving at parties or just nibbling on. These are beautiful, sweet n' salty chips you can feel GOOD about eating. Super-simple to cut down for 1 or 2!

Red Velvet Beet Cake
Good 3.0/5
(1 rating)

This is definitely one of the craziest recipes I have ever tried. Somehow, I got it into my head to make a cake with fresh beets in it. I researched a few recipes, I found one here on Spark Recipes but the quantities seemed wrong, so this is my version. I wanted to make a red velvet cake and the color of the batter after you mix in the beets is indescribably gorgeous. Unfortunately, upon baking the cake, the color fades to a golden color and loses most of it's red. (I add a picture of the bright red batter so you can see how it looks before it bakes). I used a bunch of red food coloring because I really wanted the look of a red velvet cake. Food coloring is optional, of course.

My husband says it is the best cake he has ever tasted. It is rich and moist and dense and you can't taste the beets at all, although they give the cake a distinctive taste. I didn't tell him until after he ate half of it that it had beets in it. He doesn't like beets, but he begs me to make this cake.

Don't let the title fool you. this is a tasty alternative to regular brownies or choclate cake with much less fat! These will come out with a cake like texture.
