A high protein mookie - a muffin & cookie combo! Sort of like a cookie, sort of like a muffin...very tasty! High protein, low fat.

Milk free! (I recently added 1/4 cup of margarine to the recipe... they taste better with margarine. But, margarine can be omitted!)

These taste like little mini banana breads.

My first tester batch for my Recipe Development class - the assignment is to take a recipe and create a new one that meets a certain goal. I chose to make a kid-friendly, vegan brownie that was very high in protein, therefore suitable for those who were patients recovering from surgery, trauma or chemotherapy. Not diet brownies for sure!

These are so moist and chocolatey I can't believe they are so healthy. They are a very filling and a great low carb treat.

I buy pre-ground flax meal, but you can grind your own.

I grind my almonds in a blender by putting only a small handful in at a time and pulsing the blender. Don't run continuously or you'll have almond butter. You can also buy pre-ground almonds.

I took my original recipe and upped the protein to 3 scoops and took out some of the dry milk to lower carbs. These stats are based on a low carb protein powder (20 gms a scoop).
