Adapted from the South Beach Diet Quick and Easy Cookbook (which called for goat cheese instead of feta), though I'll warn you that it's not quick at all. But it sure is tasty!

I modified a recipe I found on allrecipes.com to make it lower in sodium and fat. My husband loves it as do I :) He adds some freshly grated Parmesan cheese whereas I like it as is.
