Within the last year i have changed my diet to "mostly vegan and vegetarian" meals. It has made a HUGE differenece in my appearance and health. My husband and i both feel great :) When i cook at home i almost always cook vegan. I decided to put together a book of some of our favorites!

Yummy vegetable soup. This makes a large quantity of soup for several meals and/or freezing.. I like to make this and eat it throughout the week for lunches and snacks. Also, there is always plenty to share with a friend's/neighbor's family.Submitted by THEBOONES1
Cookbook creator says: This is really good and very easy!! I used reduced sodium vegetable broth,no salt added beans and did not add any salt which reduces the sodium down alot! Very good!
