Cookbook creator says: These were decent! The hemp milk does give a bit of a plant-tasting aftertaste, but if you add a "touch" of organic vegan maple syrup and smart balance vegan spread, they are delightfully similar to the comfort food pancakes we all know and love.

Cookbook creator says: Simple and fast, the only Vegan aspect to this recipe is that it calls for a vegan mayonnaise called, "veganaise". I used the grapeseed oil one. Serve this with the BBQ Seitan on a bun!

Modifications I made to this recipe include using almond milk instead of the called-for soy milk, and a quarter cup soy yogurt instead of the called-for 2 TBSP of pure maple syrup. I also added the flax seed to my version, and used soy flour instead of the called-for all-purpose flour.
