This is a recipe from my vegetarian slow cooker cookbook.

I love using my crockpot whenever possible, especially in the summertime!

I omitted the beans (15oz) and the black olives (2 T) because some members of my family are allergic to them. The cooking time IS factored in for the slow cooker.

I was AMAZED at the creamy flavor and taste! Plus, using the ingredients as listed, this dish is filling, healthy, low in calories (210) and fat (6g)! The way the mushrooms, cheese, and garlic blend together is yummy. *I'll put up a photo when I get home from work*

Homemade applesauce is both simple and a great way to use up fresh apples. Two pieces of equipment will make this a simple and healthy recipe. You need a slow cooker and a food mill. Mine is made by OXO. I use this WONDERFUL kitchen tool for creamy mashed potatoes, sweet potato pie and apple sauce.
You don't have to peel or core the apples. Just cook them, and the mill will do the rest of the work!

This is traditionally a very fatty food that is extremely popular at Mormon funerals. My husband had been asking for the recipe for the longest time and when I finally found it I was astonished at how bad for you it really was. So I took the recipe and modified it to make it a tad bit healtier, but remeber this is a total comfort food dish and should be ate in moderation. ENJOY!

This ultra cheap recipe came from 5dollardinners.com, although it costs less than $2 to make. I modified it to add frozen corn instead of serving corn on the cob on the side.
