I used to make this for my Dad as a kid and he loved it. It's so easy and quick - especially if using leftovers and quick-cooking rice. Have you ever had that wonderful white trash taco salad made with Doritos, taco meat, tons of cheese and an entire bottle of Catalina/French dressing?
