Delicious, full of wonderful flavor and color. It looks complex, because of all the ingredients, but is really quite simple to make. I cook the chicken, pasta, peppers and sauce at the same time. If this is too much work, do in stages.

WLS friendly chicken cordon blue. The chicken comes out moist on the inside and crunchy on the outside. The cheese is hot and gooey. Serve with a side of steamed veggies and melon for a very satisfying, high protein meal.

This is a super yummy alternative to sauteeing chicken and onions. By placing the chicken on top of the onion while it's baking, the juices from the chicken seep down into the onion, browning and seasoning it to perfection! Even my children don't realize what a healthly receipe this is!

This recipe is from Redbook and it's fantastic. I use part HOT smoked paprika and part SWEET.
Garlic paste can usually be found in the italian section of the grocery store.
