Spaghetti Squash with Avocado Pesto-from The Biggest Loser Simple Swaps
Very Good 4.5/5

This flavorful squash can always be found in the kitchen at the ranch as a creative replacement for white pasta. Add grilled chicken and a tomato salas and you have a meal. The avocado pesto is also delicious as a sandwich condiment or drizzled over sliced tomatoes.

I got this recipe from a company's coming cookbook. You can be creative by changing the vegetable and/or the cheese that you add.

When I get focused on losing weight....I buy spaghetti squash. This is so easy to make, and really filling. Add a baked chicken breast for a complete meal.

This is truly amazingly awesome - tastes like a lasagna without all that layering. It is a bit of work but is worth it and great for entertaining. You can also make 2 and freeze one up for later. The original recipe called for regular spaghetti but I substituted a spaghetti squash to lighten it up. Mixed with all the cheeses you do not notice the difference.

I was trying to use a leftover half of a spaghetti squash and came up with this idea. You can use a whole spaghetti squash. Just pierce with a fork several times, and microwave for approx. 10 minutes. Cool, then cut in half and seed, and then shred the flesh with a fork. It will look like spaghetti. Additionally, I have acid reflux so I used dried tomatoes for flavor, but you can use canned or chopped tomatoes as well.
