When I was eight years old, my parents got American Girl dolls for me. Along with the doll, I also got the Felicity cookbook and this recipe soon became one of my favorites. For those of you with a gluten allergy, you can substitute the regular flour with rice flour.

Perfect for St. Patrick's day, this is my grandfather's recipe. Any kind of beer will do, but he always drank Coors Light, so that's what I've always used. The recipe is very quick, and makes a perfect side-dish (or great morning-after breakfast.) The recipe is vegan, if you grease with cooking spray, fairly low in fat. Bonus points if you drink the other five beers while you're waiting!
