Spinach and feta pastries. Great 2-bite appetizer.

To make ahead, shape the pastries through step 6, wrap baking sheets with plastic wrap, and refrigerate for 3 days or freeze for several months (after the spanakopita are completely frozen, about 8 hours, they can be transferred to a zipper-lock bag to save space in the freezer. Transfer back to a parchment-lined baking sheet before baking.
