The nutritional info I recorded uses reduced-fat cream cheese and milk - you can make it with the fat-free that the recipe calls for and save some fat & calories.

Layered phyllo on the bottom and top of a spring roll mix makes this an easy delicious alternative to home made spring rolls. I added only garlic and pepper but you can season to your own taste.

All types of veggies and meats can be substituted in this recipe or leave out the meat for a vegetarian dish. Egg substitues or just egg whites can be used instead of whole eggs. Serves 8.

Delicious and adaptable recipe that can be altered in many ways. I use two 15 oz. cans of beans, but you could easily use one. Lower calories by decreasing to one avocado. We usually add pepper jack cheese or chopped jalapenos for more kick. I use a whole grain, low carb tortilla while my family prefers a regular flour tortilla. If you have left overs it is easy to make more quesadillas, or when mixed with greens; it makes a tasty salad. It makes about 8, 1/2 cup servings. I have a large family, but you can easily make this dish smaller.
