My husband and I are addicted to Mark Bittman's NY Times column, The Minimalist. This can, of course, be made vegetarian without the anchovies. I made this today, but I added yukon gold potatoes. I used too many anchovies though.

My neighbor gave me this awesome recipe that her grandfather used to make. It used regular pork sausage and way more cheese and butter. This is my low cal version. I serve it with 1/2 cup of cannelloni beans and I add those to my calorie count separately. You could cook them in the soup though and add them into the recipe. (My boyfriend won't eat the beans.)

i cut this recipe in half, and sprinkled some parmesean cheese on top.

you may need to add some extra water as it cooks, mine kept getting too thick.

it's good on top of pasta too!

From the 500 Low Carb Recipe book by Dana Carpender...Fast, easy and very healthy! Great for those watching carbs, gluten, and sodium. Parmesan give lots of flavor so no additional salt is needed.
