This is an amazing recipe for fall. I had this at a local restaurant and recreated. You can change the amount of whipping cream and butter to suit your needs and taste. You can also eliminate the onion, if you choose. Also, in the past, I have marinated the pork in light soy sauce and apple cider vinegar. Very simple. Great with whole grain rice and a vegetable. This dish can be assembled a day ahead and refrigerated. Remove from the refrigerator and let stand at room temperature for 30 minutes before baking. The potatoes are parboiled to soften and prevent them from releasing too much water as the gratin cooks. Look for cooked, diced ham at the grocery store.
