This one saves about 300 calories from fast food burritos that you drive through and pick up. I make up extra and wrapp in plastice wrap individually and store in the freezer. I grab one and take it to work to warm up in the microwave for a filling warm breakfast. Lots of protein keeps me full longer! Save even more calories by using La Tortilla Factory Whole Wheat Fat Fee tortillas (but they are more than twice the price). I'm pretty proud of myself with this one! I was curious to see how I could use soft tofu to create an alfredo-like sauce. I think I succeeded in creating a creamy, cheesy sauce that's not totally overloaded with calories and fat like most cream-based sauces. The added protein and omega-3's are also a benefit! I love stuffed peppers. By changing the ingrdients to turkey instead of beef and using whole grain rice, it's now a healthy, YUMMY alternative packed with nutrition.
