Years ago I first learned about a frittata from James Beard's "Beard on Food" using leftover potatoes.

When I started to make it, I did a lot of variations. One thing I kept is putting it under the broiler at the end. Crunch City!

Feel free to substitute egg beaters or egg whites, margarine, and/or low fat cheeses. Omit onions if you don't like them.

Based on a recipe from a superb low carb cook, I've "Texanized" the original. Have it plain OR garnish with your choice of salsa, sour cream (or Greek yogurt), chopped pickled/fresh jalapeños, chopped tomatoes, sliced/chopped avocados. The almond flour is really optional, but included in the nutritional statistics. The ricotta cheese blends in so well, you won't know it's there -- but adds some wonderful protein to the stats.

Cook potatoes and onions, garlic in olive oil on a a cast iron skillet
Beat eggs, pesto, cheese and some basamic vinegar
Pour egg mixture over potatoes, mix a bit and let bottom barely cook over stove top.
Transfer skillet to oven and let it cook until it is solid and golden to slightly brown on top. Cut into triangles and serve.
