This was a recipe I found while looking for crock pot recipes that did not use canned condensed soup. I adapted the original to our family's taste and this is the outcome. Delicious weekday recipe. Easy. I recommend a grass fed london broil to up the health factor.

Serve over mashed potato and enjoy with a whole wheat dinner roll.

One of the hardest things about the change to a healthy lifestyle was my family's love of comfort foods. This allows us to indulge this love and is one of my husband and son's most requested dishes. Slightly time consuming, so we usually save this for the weekend

I modified this cooking light recipe to eliminate many of the artificial filler type ingredients and include more healthy fats. For best flavor, use a high quality parmesan. Nutritional info includes the whole wheat egg noodles.

Pizza is one of my favorite foods, and the sweet sauce at Papa John's is my all-time favorite. My viewpoint is, if you're going to make it at home, don't make it "just as good," make it better! So I'm remaking a medium Papa John's pie with pineapple, onion and bacon(BACON!!!). Fresh homemade sauce and premium ingredients make this recipe more than worth the calories, and still trimmer than the fast food original!

Sweet Potato muffins!

Heres a little recipe I worked out, and Sweet Potatoes are full of vitamin A! These sweet potato or yam muffins have less than 100 calories each and less than a half a gram of fat each! They come out to just under 1 gram of sugar each, but i use no sugar in them so these are naturally occuring. By the way no these are not "mini-muffins"! Feel free to use regular muffins tins like I did... They are a great harmless snack or breakfast addition. To get your vitamin A be sure to pair it with a healthy dietary fat (we need fat to absorb the A) - breakfast with 1 ounce of reduced fat cheese and a piece of fruit is great! So low cal you can mix and match often- and made with whole wheat flour- so you are getting your healthy whole grains and their awesome antioxidants! Enjoy!
*Don't be scared of the prep time- its just for boiling sweet potatoes. I forgot to add the temperature before but I included it now: 425 F. (its in the recipe text now too) Let them cool completely! Even chilled in the fridge helps them to "set".

The meat does not need to be seared in skillet first to make this fall-apart tender, pulled BBQ beef for sandwiches. This recipe has so much flavor no one will notice the Worcestshire sauce & the salt were deleted to reduce sodium (you may also use low-sodium catsup and BBQ to reduce sodium further). Using molasses instead of brown sugar and Worcestshire gives a depth of flavor and authenticity, while reducing sugar & sodium. It is great to take to picnics, buffets, or tailgating. Freezes well.
