I'm fine-tuning my healthier lifestyle to make it even better, and I want to spice up my meals with something different, healthy, and balanced. I've discoverved how to eat to beat glucose intolerence, so I'm looking for recipes with very low to zero sugar, and a balance of carbs to protein.

This is a variation of a Recipe submitted by SparkPeople user TWINMOM143 - Skillet white beans, spinach, & tomatoes
I personally do not like the texture of beans over pasta, so I turned the beans into a sauce. I also used fresh tomatoes instead of canned.
