Really good chicken fajita filling. Adapted from a fajita recipe that used tequila where I use teriyaki. I feel better using this 'cause I know what spices go into it, therefore no MSG like some of the packaged fajita spice mixes. (For the record, since a lot of the liquid is drained from the chicken after it marinates, I've used only half portions of the marinade juices to calculate calories. Basically, you're covered.) :) Original recipe used generic measurements, but I weighed my ingredients this time, and used those to calculate calories. This is a makeover of Cracker Barrel's Chicken & Dumplings. My aunt had created the original recipe which called for 1.75 lb chicken and whole milk. It was always one of my families favorite dinners that I made once in a while on special Sundays. Recently, I decided to try a healthier version of it with lower calories, cholesterol & sodium to see if it would pass the "family test". It did! They couldn't tell the difference.
