This is a makeover of Cracker Barrel's Chicken & Dumplings. My aunt had created the original recipe which called for 1.75 lb chicken and whole milk. It was always one of my families favorite dinners that I made once in a while on special Sundays. Recently, I decided to try a healthier version of it with lower calories, cholesterol & sodium to see if it would pass the "family test". It did! They couldn't tell the difference. The healthy version of this recipe went down 76 calories, 31mg cholosterol & 1104 mg of sodium per serving.

On a side note, I know some people who use prepackaged biscuit dough to make their dumplings to make it easier but I don't like the taste of the perservatives because it makes the whole recipe taste like it came out of can. There is nothing like homemade!

You can use leftover cooked turkey or chicken. I used whole milk and soup, but you can use skim or low fat for lower calories and fat. You can add 1/2 cup shredded cheddar cheese. I don't like cheese.

Delicious chicken gyros using authentic souvlaki marinade and Tzatziki sauce.

You can slice the chicken into strips before or after cooking, I did it before and it was fine, I just had to use foil on the grill.

The greek seasoning it calls for can be found at a grocery store, I used McCormick's gourmet seasoning blend of Greek seasoning.

The nutritional info does seem high but I included all the ingredients when I calculated it. You won't use that much tzatziki sauce and the marinade will be discarded after marinading.

I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 284 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings!
