Simple and straight forward, this recipe could be made the day ahead of time, the morning of to save the marinade time. I make two pounds at once, marinade over night, and freeze off in portion sizes the next day while i skewer my kabob for dinner. That way, all you have to do is pull it out the night before and skewer it the next day just before grilling or baking. This is an altered recipe from the Better Homes and Gardens Cookbook. It uses ready-to-bake/no-boil gluten free rice noodle in the place of normal lasagna noodles and it tastes GREAT! We also recommend the sauce used in this recipe to ensure that it remains gluten-free. The use of weight-watchers cheese, 98% fat free ground beef, and egg beaters lowers the fat and calories considerably. Perfect for chocolate lovers! Great for entertaining, deceptively easy to make. Perfect for people who can't have gluten. Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. I flour the pan using cocoa powder so it won't leave white marks on the cake and keeps it totally gluten free. Not low calorie, but very rich so you could easily half the portion if you pair it with some berries on top. I also know someone who substituted splenda for the sugar and swore she couldn't tell the difference but I have never tried it. I have been very particular about my taco seasoning. So going gluten free really threw me for a loop as my favorite seasoning used flour. I was so wonderfully surprised and pleased when I first tried this seasoning mixture. It is awesome. I like mine a bit spicy, so lower the chili powder and crushed red peppers by about 1/2-1 tsp each to make it more family/guest friendly.
