use creamed coconut or dessicated coconut.for a lighter version use light tinned coconut or flavouring this is one of the easiest and quickest ways ive found to make i t.with all the favour and low on calories compared to a takeaway

This is my fav eggplant curry mom makes at home:) you substitute sesame seeds in the place of poppy seeds or even peanuts grounded:) I used poppy seeds.
