General Tso's chicken was always my favorite, until I stopped eating meat. This is just as tasty, and so much better for you.
This is great by itself, or served over rice, quinoa, or steamed broccoli.
The celery is optional; it helps bulk up the meal with few added calories.

This is decadent, use with lots of veggies and in moderation. Toss with hot pasta instead of pesto, try it as an elegant and rich spread on whole grain crackers, thinly spread on bread instead of mayo for a lush addition to a sandwich, or crumble on a vegan pizza as a rich topping instead of the standard cheese. Add hot pepper to taste (be careful if you plan on cooking the mixture later because the heat seems to concentrate) or a fresh herb if you have it... basil is nice but I bet thyme or marjoram would be great too.

Notice that the ratio is 1 to 1 to 1/10th for the olives, walnuts, and garlic respectively. I know weights are more accurate so I went with them here but feel free to experiment. I remembered this "recipe" from a Moosewood cookbook.that I used to have a long time ago... I'm not sure if I changed it or not.

Here we go...summertime's a-comin', and there's nothing like a good brat, huh? Except for the fats, chemicals, additives...'bratwurst,' the German word for "down-payment on a coronary disease." These are ALL natural, non-chemically-enhanced, GREAT for those watching fat intake, SUPER for protein sourcing, and animal-friendly.

Quick and easy to make.

Not calorie light, but full of flavour and high in protein.

This dairy-free pesto comes from a member who lives in the heart of cilantro country--northern California. You'll love it.

Modified from "Practical Vegetarian Cookery." Their insane recipe asks for 1 1/4 cups of olive oil. I found 1/2 tbsp. to be sufficient.

**Nutrition Data is wrong - for starters calories way too high - will attempt to figure out problem and fix.***

My favorite dairy-free, protein-rich sauce! I use it for nachos, macaroni and "cheese", anything that requires a cheesy sauce. Don't let the yeast part daunt you -- it tastes awesome!

Adapted from a Sandi Richard recipe, these baked-not-fried vegan curry spring rolls are just as crispy as the deep-fried appetizers, made with phyllo pastry and just a touch of oil spray. Delicious with plum sauce or sweet-n-sour sauce.

My mom's famous vegan eggplant parmesean. Simple and delicious! Non-vegans will just assume you're using a very low-fat mozzarella. Add chilis to your tomato sauce if you like some spice. You can also use canned tomato sauce and pre-packaged breadcrumbs if you are short on time. Just make sure to take the differences in the nutritional information into account!
