Based on a recipe from a superb low carb cook, I've "Texanized" the original. Have it plain OR garnish with your choice of salsa, sour cream (or Greek yogurt), chopped pickled/fresh jalapeƱos, chopped tomatoes, sliced/chopped avocados. The almond flour is really optional, but included in the nutritional statistics. The ricotta cheese blends in so well, you won't know it's there -- but adds some wonderful protein to the stats.

Atkins Induction friendly, my version of Low carb! Spinach as posted by SLOWSET, using fresh rather than frozen spinach. The spinach is already net carbs - so do not subtract the fibre from the carb total if doing atkins - whole recipe is about 4.5 net carbs.

Okay, I confess that these taste nothing like fish sticks, but they taste delicious with tartar sauce or cocktail sauce(which was the point for me!). They are really just a healthier, low-carb version of a breaded tofu stick, which would taste great with just about any dipping sauce! This recipe is a combination of two similar recipes that I had in my cookbooks, with some modifications to made them healthier and tastier!

Directions
Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with cooking spray.
Beat the eggs in a mixing bowl with the onion and flour until the flour is no longer lumpy. Stir in the spinach, cottage cheese, Cheddar cheese, butter, salt, and pepper until evenly combined; pour into the prepared dish.
Bake in the preheated oven until the casserole is bubbly and the top is golden brown, about 45 minutes.
