Our current grocery budget is $50 per week, which precludes purchasing most items fat-free, low fat, organic, or any of the other things that we've grown so used to. Obviously, if you can afford to make those substitutions, you should. I needed these recipes to reflect what we are ACTUALLY eating.

Calculated at 4 servings. It divides into 6 good-size servings as well. I eat 1/6th, and my husband eats 1/4th, so I input .66 serving.

Feel free to sub egg beaters for eggs, but do not sub all egg whites. I find 6 eggs and 4 whites works great.

MUCH less expensive version of the fancy trail mix blends you find in the store. Aldi has a 10oz bag of trail mix with about 5 servings for $1.75. 20 servings would cost you $7.00. This recipe makes more than double that for about $6.50.

Cookbook creator says: While I was waiting for the rice to cook, I mashed the beans and salsa a bit. Also, we only had mild salsa, so I added a Tbs of hot sauce. It turned out really well! The serving size is 2 of these massive patties, but if you're not starving, 1 would probably do the trick!

I put the recipe in the way we usually make this, and almost fell off my chair when I checked the nutrition info. This version has some adjustments (ground turkey instead of beef, and texas toast instead of french bread or kaiser rolls), which we'll be trying tonight, and keeping as long as it still tastes good! (Still includes full-fat pepperjack. We'll change this when we can.)

Found this in Family Fun magazine, and I was just tickled pink that it actually worked, and I can make my own english muffins! The recipe called for "all purpose flour," but I used 1/2 unbleached, and 1/2 whole wheat. Next time I'll use more wheat.

These didn't turn out to have all the nooks and crannies I love, and the texture is a bit more like a chewy bread than what I think of as "english muffin," but they are definitely edible, and quite a bit lower cal than the Thomas's I've been buying for years.

Now that I know I can do this, I'll experiment with other recipes and see if I can't get my nooks and crannies back!
