Cookbook creator says: Very good! I may several substitutions for the vegetables - namely, used red cabbage instead of lettuce, added snow peas and alfalfa sprouts, and kept the cucumbers plain. I also didn't use the sweetener in the sauce, or marinate the chicken in soy sauce. Still, this was absolutely delicious. 5/5

Cookbook creator says: I used regular Coca-Cola instead, and only a little bit of ketchup. The chicken was very moist. I served it with brown rice, and spooned some of the extra sauce on top. The best part? I started this cooking, then did my cardio workout, and when I was done, so was my dinner! Easy, and yummy! 5/5

Cookbook creator says: I made cupcakes for a coworker's birthday, and used 4 oz of coconut water and 8 oz of sprite zero. The cupcakes are light and fluffy, and the pudding adds a nice touch! I'm not a huge coconut fan, but these were pretty good...and got rave reviews! 4/5

Cookbook creator says: This was ok, but nothing overly special. I did modify the recipe some, so that might be why. I used a boneless pork loin, and baked it in the oven rather than searing it. I also used french vanilla flavored coffee because that was all I had. The meat was moist and good, but no strong flavor. 3/5

Cookbook creator says: I normally don't like coconut, but this sounded good. I more or less eye-balled the ingredients, and used chicken breasts instead (which meant longer time baking). I used coconut water instead of the milk. Juicy, and good flavor, not too strong, but next time I'll pass on the shredded coconut. 3/5

Cookbook creator says: I made a recipe very similar to this, only added a can of diced tomatoes and some shredded cheese. It was the first time I'd ever made polenta, so that might have been part of my problem, but I thought it was pretty bland. The salsa helped, but this isn't something I'd make again. 1/5

My mom always made meatloaf with oats instead of bread crumbs. I've tried it both ways, and prefer the oats by far! For a smaller meatloaf just cut the ingredients in half.
