A huge burst of Vitamin A, and a small bar is only 55 calories! Cut these bars into 15 rather than 30 and its still only about 100 calories, what a great snack!

My stepdad (a Type 2 diabetic) has a massive sweet tooth when it comes to fruit - especially bananas. Banana bread is one of his favourite snacks, but traditional sugar-free recipes can be so dry that it's not worth it to him to bother. This recipe combines Splenda, honey and Demerara sugar with roasted bananas and ricotta for a ton of moisture, while low-carb chickpea and almond flours help balance the carb load in the batter. This freezes really well, even pre-sliced and wrapped in plastic for lunches!

It is exactly what the name is and dang good too! This cake is very moist an can be changed around like yellow cake mix and 7up.

Moist, delicious cake that your friends won't know is healthier for them than the regular version! My mother-in-law made this for my birthday, based on a regular recipe with Splenda substitutes and adding a box of sugar free pudding to keep moisture in the cake.
