I altered my favorite chocolate muffins to be practically fat free and low calorie. Moist and chocolatey! Only 109 cals and 2.5 g of fat for a large muffin, or per slice (12 a loaf)Submitted by CASEYNJASON
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the yogurt (I've used applesauce when out of plain yogurt as well). Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving.
LOW-CAL full dinner!!! A favorite amongst my 2 y/o as well!! I promise this is the BEST chicken divan and I didnt cut the fat in this recipe, but you can subsitute for low cal parmesan and fat fee mayo- but its still low-cal with all the good stuff!! Submitted by VASIESMA
