Tangy and creamy, chock full of veggies and amazingly low in calories.
It's a quiche! Deliciousness manifested!
I like it with apples on the side, but some may choose to put apples in it.
Traditional hummus with a kick....good enough for gourmet and deceptively simple. I serve this with toasted whole grain pitas or tortillas and crudite. Yum!!!
I will roast these alone, or alongside some skinless chicken breasts. Simple and delicious. In the fall, I also add parsnip, rutabega and other root veggies.
