My family loves cheesecake but we are all watching our intake of fats and/or sugars. This recipe is very satisfying and delicious -- and nearly instant. If you want to further lower the fat, use all low-fat or no-fat sour cream and cream cheese; I've chosen to leave a little fat in because the rich taste is so satisfying. You can also add another box of sugar-free/fat free pudding mix (or half of one) to make chocolate or butterscotch "cheesecake".
