This is the same recipe seen elsewhere on this site (see Moist Pumpkin Cake). The only difference here is that this is 18 servings instead of 12, to make adding this to your food tracker easier if that's the serving amount you choose.

This is the healthiest ice-cream ever... all my friends were dubious about it at first but loved it after they tatsed it. Good for those nights when you feel like treating yourself to something sweet. A great recipe to make in bulk and have a few of these already frozen for treats when you need them

I love rice pudding and for years attempted to reproduce the rice pudding I enjoyed when I was younger. Then I met my wonderful mother in law who on one Sunday afternoon served up that bowl of luciousness. After Mom stopped cooking it was my joy to take over the rice pudding recipe. My first attempt is filled with fat - 13.4g in a one cup serving, versus this new low fat version with only 1.3g of fat.
Give it a try, you'll love it.
It makes a lot and is a great addition to a family meal or any special occasion.
