This is my vegetarian cookbook where all the portions and measurements are for one person. :) Most of these are made on very few ingredients since I am a college student and don't keep much in my room. Feel free to make and enjoy!

This is adapted from another recipe. I just quartered the measurements and am using using a Buttermilk Whole Wheat Flour mix instead.

Try them with some veggie sausage and a side of fruit!

Stirfry for one. It is college student tested and approved. Plus, it only takes less than an hour to prepare, cook, and eat. :)

These are some good burritos that are high in protein and surprisingly low in carbs. This recipes makes two tacos - a meal for one person. :)
